Weekend Recipe: Guac an Egg

Finely mince the onions, tomatoes and bell pepper. In a separate bowl mash up the avocados, squeeze in some lemon juice, add the salt, pepper, and minced garlic. Add the mixtures together in to one bowl and add in the seasoning, chopped coriander and some shakes of tobasco. 

In a pan of boiling water, crack in the eggs slowly. Put the heat on low and with a spoon gather the eggs in a round motion. Once cooked, scoop them out and leave to rest.  Plate out the guacamole and rest the eggs on top. Sprinkle it with some hot paprika and have it with some oat cakes!

What you  need
– 2 ripe avocados
-2 eggs
– 3-4 oatcakes
-half a lemon
-1 clove of garlic
– seasoning- salt, pepper, chilli flakes, hot paprika,
– half an onion
– 1 tomato
– half a bell pepper
-tobasco
