5 Mango Based Dessert Recipes For You To Indulge In

Mangoes are the epitome of summer time and as we all say, its the king of all fruits! Here are some fun recipes for you all to savour while the mango season is still ongoing!

1. No Bake Mango Cheesecake- Cheesecakes are super easy to make as there is no going wrong with the consistency. With no baking involved cheesecakes can be made by anybody that has a sweet tooth.

What you need:
For the base:
150g of digestive biscuits
100g unsalted butter
2 tbsp white sugar

Mangoes:
700g mangoes

Filling:
41/2 tsp gelatin powder
1/2 cup cold tap water
500g cream cheese
150g caster sugar
300ml whipped cream

Mango jelly:
3/4 tsp gelatin powder
1/4 cup cold tap water
1 tbsp lemon juice

How to make it:

Use a 22cm cake pan lined with butter paper and a little bit of oil to grease the base and the sides of the pan. Break the digestive biscuits into tiny fine pieces. Add butter and sugar to the biscuit crumbs and mix until the base has become a semi solid crust and press down in the cake pan until firm. For the filling, put water in a heatproof bowl and sprinkle the gelatin over the surface (don’t dump it in the centre) and stir. Put aside this mixture until it turns gelatinous. Then microwave this mixture for 15 minutes on high heat twice and look to stir it in between. Set aside to cool. Place mango cubes in the processor and blend them until smooth. Measure 3/4th cup and save for mango jelly. Add cream cheese, cream and gelatine mixture into the food processor and blend for 30 seconds until it is smooth. Put it in the cake pan for 3+ hours until the top is set. For the mango jelly, Pour water into bowl, sprinkle over gelatin. Leave 5+ min. Microwave on high 2 x 10 sec, stir well until granules dissolved. Set aside 5 minutes to cool. Place reserved mango puree (from Filling) and lemon in a bowl. Pour over gelatin and whisk well. Pour over cheesecake filling. Refrigerate overnight.

2. Homemade Mango Ice Cream- Ice cream is everyones favourite and what’s more refreshing than making some homemade organic ice cream for you and your loved ones based on your own preference? This easy recipe will make you an expert ice cream mogul!

What you’ll need:
3 ripe pureed mangoes
3 cups milk
2 cups fresh cream
1 tin condensed milk

How to make it:
Combine condensed milk, milk and mango puree in a bowl. Whip the cream and fold into the liquid mixture. Pour into a freezing tray and freeze till half set. Remove and beat with a whisk until smooth. Doing so will help keep the texture of the ice cream soft and creamy while it sets. Return to tray and freeze till well set. Now serve to your family as the perfect summer dessert!

3. Mango mousse- A mousse is always super easy to make. With no baking or cooking involved the mousse is easy to prepare and indulge in when you get a last minute craving!

What you need:
2 medium sized mangoes (chopped)
1 tbsp sugar
1/2 cup whipping cream

How to make it:
In a blender add the chopped mangoes and sugar and blend it till completely smooth. Take cream in a bowl and use an electric beater to whip. Add the mango puree to the beaten cream and mix it well. Serve the mango mousse in glasses and chill before eating.

4. Mango soufflé- Crispy on the outside, soft and fluffy on the inside, a soufflé can be filled with different ingredients. This simple soufflé recipe is a very easy one even if it makes one feel a little skeptical at first and may seem a little hard to pull of. However, it’s one of the best dessert recipes out there!

What you need:
5 cup mango puree
10 egg whites
3 cup milk
2 tbsp custard powder
1 cup water
100 ml fresh cream
1/2 cup caster sugar
4 tbsp gelatin
2 tbsp vanilla extract

How to make it:
Mix the custard powder with 1/2 cup of milk in a bowl. Keep aside until required. Heat a cup of milk over a deep pan. Add sugar in it and mix it well. When it starts to boil add the custard and cook it until it gets thick. Leave to cool.
Add the mango puree to the mixture and stir well after which dissolve the gelatin in 1/2 cup of warm water and add to the mango mixture.  Mix cream and whipped egg whites into the mango mixture and pour into small cups. Refrigerate until firm.

5. Mango sorbet- A sorbet is just what we need in this scorching heat. With very few calories to add to your count and a refreshing after effect can totally uplift the mood!

What you need:
1 cup sugar
1 cup water
3 ripe mangoes
3 tbsp lime juice
Pinch of salt
2 tbsp light corn syrup

How to make it:
To make the syrup, heat the sugar, salt and water in a medium saucepan until the sugar and salt have completely dissolved. Set it aside too cool. To prepare the mango, use a vegetable peeler to peel the mango, and cute the flesh away from the large flat seed. Throw away the seed and peel and chop the mango to make about 4 cups of chopped mango. Blend the mango with lime juice and simple syrup made earlier and blend until completely smooth. Pour into a medium bowl, cover with plastic wrap, and refrigerate until completely chilled. When ready to put the chilled lime mango purée into your ice cream maker, mix in the corn syrup. Process the mixture in your ice cream maker (if you own) and freeze the sorbet until it is completely frozen (at least 6 hours). Now serve the refreshing dessert and enjoy with friends and family!
